Mango and Feta Salad

 With just four simple ingredients, this Mango and Feta Salad is the stuff your summertime dreams are made of. It's sweet and salty and all things wonderful!

Is it hot out where you are? It's hot here! Exactly how it should be during the 4th of July holiday. And the heat means 2 things: 1) you don't want to spend a lot of time in the kitchen and 2) you want a meal or snack that's super light and refreshing. Fruit and cheese is pretty much the best combination any time and mango and feta make for the best summertime salad. If you're apprehensive about the fruit and cheese combination, don't be! Once you come around to it, you'll realize how many glorious combinations you can make... But I promise that this is one of the best!

MANGO AND FETA SALAD RECIPE

I've been craving mangos lately. So much. To the point where I'll often just slice one up and then stand over the cutting board snacking on it. No plate required. I'll only mean to eat a little bit, but before I know it, the entire mango will be gone. I had a bunch of feta in my fridge and decided to make a mango and feta salad, not quite sure how the combination would go. Oh, it went well. Really well.

There's nothing complicated about this salad and it only really involve four ingredients (six if you count the salt and pepper). Fresh mango, crumbled feta, basil, and extra virgin olive oil. Simply combine all the ingredients in a bowl.

Toss well. And summertime heaven is yours. I almost always love salty and sweet combos, but there's something extra delicious about the bold sweetness of mango with the brininess of feta and it made my mouth so happy. Plus, basil is always a summertime joy and extra virgin olive oil ties everything together in the perfect way.
Technically, I'm labeling this mango and feta salad as a side dish, but I wouldn't blame you if you ate it as a meal. Especially on a day when it's really, really hot out. It would also go fabulously with a glass of cold white wine. Isn't there something so fun about a fruit and cheese salad and wine for dinner in the summer? Maybe you'll want a piece of nice crusty bread, too.

Or maybe you'll serve this as a side along some grilled chicken or salmon. That would also be delicious.
However you serve it, just know that once you make this mango and feta salad once, you'll definitely be making it again. I'm planning to take full advantage of mango and basil season while I can. Luckily, it's always feta season.
